Description

A delicious and comforting cheesy beef noodle casserole, perfect for family dinners.


Ingredients

  • 12 oz egg noodles
  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 (15 oz) can tomato sauce
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 2 cups shredded cheddar cheese, divided
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the ground beef and diced onion. Cook, breaking up the beef with a spoon, until browned and cooked through—about 6 to 8 minutes.
  3. Stir in the minced garlic, cooking for another minute until fragrant. Pour in the tomato sauce and add the Italian seasoning. Season with salt and pepper to taste. Let simmer on low for 5 minutes to allow flavors to blend.
  4. In a mixing bowl, combine the sour cream, cottage cheese, and 1 cup of shredded cheddar cheese. Stir until smooth and creamy.
  5. Preheat your oven to 350°F (175°C). In a greased 9×13-inch baking dish, layer half of the noodles, followed by half of the creamy mixture, then half of the beef mixture. Repeat the layers once more.
  6. Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top. Bake uncovered for 25–30 minutes, or until the casserole is bubbly and the cheese is melted and golden. Garnish with chopped parsley if desired.
