Ingredients

- 1 tablespoon olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 red bell pepper, finely chopped
- 1 carrot, finely diced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon ground coriander
- ½ teaspoon turmeric
- ¼ teaspoon cinnamon
- Salt and black pepper, to taste
- 1 can (15 oz) chickpeas, drained and rinsed
- 1½ cups vegetable broth
- 1 cup dry couscous
- 2 tablespoons chopped fresh parsley or cilantro
- Lemon wedges, for serving (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, bell pepper, and carrot. Cook for 4–5 minutes until softened.
- Stir in garlic, cumin, paprika, coriander, turmeric, cinnamon, salt, and pepper. Cook for 30 seconds until fragrant.
- Add chickpeas and vegetable broth. Bring to a gentle boil.
- Remove from heat and stir in couscous. Cover the pot and let sit for 5 minutes.
- Fluff couscous with a fork. Stir in fresh herbs and adjust seasoning as needed.
Notes
- Serve with lemon wedges for brightness.
- Pair with roasted vegetables.
