Delicious taco ranch phyllo bites perfect for parties and gatherings.

- 1 lb ground beef
- 1 packet taco seasoning mix
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup sour cream
- ½ cup ranch dressing
- 2 tablespoons chopped green onions
- 1 package phyllo shells (15 count), thawed if frozen
- Optional: diced tomatoes, chopped lettuce, jalapeño slices for garnish
Instructions
- In a large skillet over medium heat, cook the ground beef until fully browned, breaking it up with a spatula as it cooks. Drain off any excess fat.
- Sprinkle the taco seasoning mix over the browned beef. Add ¼ cup of water, stir to combine, and let it simmer for 2–3 minutes until the mixture thickens slightly and is well coated with seasoning.
- In a medium bowl, mix together the sour cream and ranch dressing until smooth. Add in the cheddar cheese, Monterey Jack cheese, green onions, and the seasoned beef. Stir everything until well combined.
- Place your phyllo shells on a baking sheet. Spoon a generous tablespoon of the taco ranch mixture into each shell, gently pressing to fill them well without overflowing.
- Preheat your oven to 350°F (175°C). Bake the bites for 10–12 minutes, or until the cheese is melted and the tops are lightly golden.
- If desired, top with a bit of diced tomato, chopped lettuce, or sliced jalapeños for a fresh finish. Serve warm and watch them disappear.
