- Shredded cheddar or Mexican-blend cheese
- Shredded lettuce
- Diced tomatoes or pico de gallo
- Corn kernels
- Black beans
- Sliced avocado or guacamole
- Sour cream or Greek yogurt
- Fresh cilantro
- Jalapeño slices
Instructions
- Heat a large skillet over medium heat.
- Add ground beef and cook, breaking it apart, until browned (about 6–7 minutes).
- Add diced onion and cook for 2–3 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Sprinkle in taco seasoning, smoked paprika, cumin, chili powder, salt, and pepper.
- Pour in tomato sauce and water.
- Stir well and let simmer for 5–7 minutes, until thick and flavorful.
- Taste and adjust seasoning if needed.
- Warm cooked rice in a saucepan or microwave.
- Stir in butter or olive oil, salt, and lime juice if using.
- Fluff with a fork and set aside.
- Spoon rice into serving bowls.
- Top with seasoned taco beef.
- Add cheese and allow it to melt slightly.
- Finish with your favorite toppings like lettuce, tomatoes, avocado, and sour cream.
