  • ½ cup tomato sauce or crushed tomatoes
  • ¼ cup water
  • 2 cups cooked white rice or brown rice
  • 1 tablespoon butter or olive oil
  • ½ teaspoon salt
  • Juice of ½ lime (optional, for flavor)
  • Shredded cheddar or Mexican-blend cheese
  • Shredded lettuce
  • Diced tomatoes or pico de gallo
  • Corn kernels
  • Black beans
  • Sliced avocado or guacamole
  • Sour cream or Greek yogurt
  • Fresh cilantro
  • Jalapeño slices

Instructions

  1. Heat a large skillet over medium heat.
  2. Add ground beef and cook, breaking it apart, until browned (about 6–7 minutes).
  3. Add diced onion and cook for 2–3 minutes until softened.
  4. Stir in garlic and cook for 30 seconds until fragrant.
  5. Sprinkle in taco seasoning, smoked paprika, cumin, chili powder, salt, and pepper.
  6. Pour in tomato sauce and water.
  7. Stir well and let simmer for 5–7 minutes, until thick and flavorful.
  8. Taste and adjust seasoning if needed.
  9. Warm cooked rice in a saucepan or microwave.
  10. Stir in butter or olive oil, salt, and lime juice if using.
  11. Fluff with a fork and set aside.
  12. Spoon rice into serving bowls.
  13. Top with seasoned taco beef.
  14. Add cheese and allow it to melt slightly.
