Ingredients

Scale

For the Tortilla Crust:

  • 3 large flour tortillas (810 inches)
  • 1 tbsp butter or olive oil (for greasing)

For the Egg Mixture:

  • 6 large eggs
  • ½ cup milk or heavy cream
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder (optional)
  • ½ tsp paprika

For the Filling:

  • ½ cup shredded cheese (cheddar, mozzarella, or a blend)
  • ½ cup cooked bacon or ham (optional)
  • ½ cup cherry tomatoes, halved
  • ¼ cup chopped onions (red or green onions)
  • ½ cup spinach or bell peppers, chopped

For Garnishing (Optional):

  • Fresh parsley or cilantro
  • Extra cheese
  • Hot sauce or salsa

Instructions

Step 1: Prepare the Crust

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9-inch pie dish with butter or oil.
  3. Layer the tortillas in the dish, slightly overlapping to form a crust. Press them down to fit snugly.

Step 2: Make the Egg Mixture

  1. In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and paprika.
  2. Stir in half of the cheese for extra creaminess.

Step 3: Assemble the Quiche

  1. Evenly distribute the veggies, bacon/ham, and cheese over the tortilla crust.
  2. Pour the egg mixture over the fillings.
  3. Sprinkle the remaining cheese on top.

Step 4: Bake

  1. Bake for 30–35 minutes, or until the eggs are set and golden brown.
  2. Let it cool for 5–10 minutes before slicing.

Step 5: Serve & Enjoy!

  • Garnish with fresh herbs and extra cheese.
  • Serve with salsa, avocado, or hot sauce for extra flavor!

Notes

  • Corn tortillas can be used instead of flour for a gluten-free version.
  • For a thicker quiche, double the tortilla layers for a sturdier crust.
  • Storage: Refrigerate leftovers for up to 4 days. Reheat in the oven at 325°F (160°C) or microwave for 1–2 minutes.
  • Make it dairy-free by swapping milk for almond or coconut milk and using dairy-free cheese.
  • Meal Prep Tip: Assemble the night before, cover, and bake fresh in the morning.
