- 3 cloves garlic, minced
- ½ small red onion, finely chopped
- 1 tsp crushed red pepper flakes (adjust to heat preference)
- ½ cup sun-dried tomatoes, chopped
- 1 tsp Italian seasoning
- ½ tsp smoked paprika
- 1 tbsp tomato paste
- 1 cup vegetable broth (or chicken broth)
- 1 cup heavy cream (or coconut cream for vegan)
- 2 cans (15 oz each) butter beans, drained and rinsed
- ¼ cup grated Parmesan cheese (or nutritional yeast for vegan)
- Salt and black pepper to taste
- Fresh parsley or basil, chopped, for garnish
- Optional: squeeze of lemon juice for brightness
Instructions
- In a large skillet over medium heat, add olive oil. Sauté garlic and red onion for 2–3 minutes until fragrant and translucent.
- Stir in red pepper flakes, Italian seasoning, smoked paprika, tomato paste, and sun-dried tomatoes. Cook 1–2 minutes to deepen flavor.
- Pour in the broth and cream. Stir well and simmer for 5–6 minutes until slightly thickened.
- Stir in butter beans. Simmer another 5–8 minutes, letting the beans absorb the flavors and the sauce become creamy.
- Stir in Parmesan cheese until melted and smooth. Taste and season with salt, pepper, and lemon juice if desired.
- Garnish with chopped parsley or basil and a little extra cracked pepper.

- Serve over toasted sourdough, rice, or pasta.
- Add spinach or kale for extra greens.
- For a heartier meal, top with grilled chicken or shrimp.
