Description
A delicious cheese dip made with Velveeta and Rotel tomatoes, perfect for serving with tortilla chips.

- 10 oz can Rotel Tomatoes (original or mild)
- 16 oz Velveeta Cheese (cubed)
- 1 cup Sour Cream
- 1 lb Lean Ground Beef (optional, cooked and drained)
- Tortilla Chips (for serving)
Instructions
- In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat and set aside.
- In a saucepan on low heat, add cubed Velveeta cheese and drained Rotel tomatoes. Stir frequently until melted and smooth.
- Mix in sour cream until fully combined.
- If using ground beef, stir it into the cheese mixture until evenly blended.
- Transfer to a serving bowl and enjoy warm with tortilla chips.
Notes
- This dip is best served warm and can be easily reheated.
- Feel free to adjust the spice level by choosing different varieties of Rotel.
