- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1–2 jalapeños or green chiles, seeded and diced (optional, adjust for heat)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon paprika
- ½ teaspoon dried oregano
- Salt and black pepper, to taste
- 4 cups chicken broth
- 2 (15 oz) cans white beans (Great Northern or Cannellini), drained and rinsed
- 1 (15 oz) can sweet corn, drained
- 2 (4 oz) cans diced green chiles (mild or hot)
- 3 cups cooked shredded chicken (rotisserie chicken works perfectly)
- ½ cup sour cream (or Greek yogurt)
- ½ cup shredded Monterey Jack or Pepper Jack cheese
- Juice of 1 lime
- Optional toppings: Extra sour cream or Greek yogurt, Chopped cilantro or parsley, Lime wedges, Crushed tortilla chips or strips, Shredded cheese
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until soft (about 3–4 minutes).
- Stir in garlic and jalapeños and cook another minute until fragrant.
- Add cumin, chili powder, paprika, oregano, salt, and pepper. Stir for 30 seconds to toast the spices slightly.
- Pour in the chicken broth, green chiles, white beans, and corn. Bring to a simmer for 10 minutes.
- Stir in the shredded chicken and simmer for another 10 minutes so the flavors combine.
- Remove about 1 cup of the soup, blend it (or mash some beans with a fork), then return it to the pot to thicken.
- Stir in sour cream, shredded cheese, and lime juice. Mix until smooth and creamy.
- Ladle into bowls and top with extra sour cream, chopped cilantro, shredded cheese, and lime wedges.
Notes
- For a spicier version, add a pinch of cayenne or diced jalapeños.
- For a creamier version, add 4 oz cream cheese while simmering.
- For a slow cooker option, combine everything except sour cream and cheese. Cook on low for 6–8 hours or high for 3–4. Stir in dairy just before serving.
