- 6 cups mixed greens (spring mix, baby spinach, or arugula)
- 2–3 small oranges (tangerines or clementines), peeled and segmented
- 1/2 cup pomegranate seeds
- 1/3 cup feta cheese, crumbled (preferably from a block)
- 1/2 cup candied pecans
- 3 tbsp olive oil
- 1 tbsp apple cider vinegar (or white wine vinegar)
- 1 tbsp honey or maple syrup
- 1 tsp Dijon mustard
- 1/2 tsp minced garlic
- Salt & black pepper, to taste
Instructions
- Add the mixed greens to a large salad bowl.
- Top with orange segments, pomegranate seeds, candied pecans, and crumbled feta.
- In a small bowl, whisk together olive oil, vinegar, honey, Dijon mustard, garlic, salt, and pepper.
- Taste and adjust sweetness or acidity as needed.
- Pour the dressing over the salad right before serving.
- Gently toss to combine.
- Serve immediately and enjoy!
Notes
- Fresh oranges taste best, but you can use canned mandarins if needed.
- Crumble your own feta — the flavor is fresher and richer.
