Description
A refreshing bowtie pasta salad with cherry tomatoes, basil, and a lemon vinaigrette.
Ingredients

- 8 oz bowtie pasta
- 1 cup cherry tomatoes, halved
- 1 cup fresh basil leaves, torn
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup extra virgin olive oil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente, about 8-10 minutes. Drain and rinse under cold water.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- In a large bowl, combine the cooked pasta, cherry tomatoes, and torn basil leaves. Pour the dressing over and toss gently.
- Sprinkle Parmesan cheese on top and toss lightly to combine.
- Chill in the refrigerator for about 30 minutes before serving.
Notes
- This salad can be made ahead of time and served chilled.
- Feel free to add additional vegetables or proteins as desired.
